STIR-FRIED GREENS WITH CASHEWS AND GINGER

Easy to prepare, and full of flavour, this dish of fragrant Chinese Vegetables ticks all the boxes.

Preparation Time: 10 minutes
Cooking Time: 8 minutes

Ingredients (serves 6)
  • 1/2 cup unsalted cashews
  • 1 tablespoon vegetable oil
  • 3 cloves garlic, crushed
  • 3 teaspoon ginger, freshly grated
  • 2 Buk Choy, chopped
  • 1 Gai Lan, chopped
  • 2 tablespoons soy sauce
  • 2 tablespoons sweet chili sauce
  • 4 tablespoons crisp-fried shallots
Method
  1. Heat a large wok over high heat
  2. Add cashews and toss for 1 minute, until golden. Remove.
  3. Add oil, garlic, ginger and stems of Buk Choy and Gai Lan to stir-fry until stems are tender (+/- 4 minutes).
  4. Add Buk Choy and Gai Lan leaves, soy and sweet chili sauces, stir-fry until leaves have just wilted (+/-3 minutes).
  5. ServeĀ and sprinkle with crisp-fried shallots.

Delicious with rice or soba noodles.
