CORIANDER PESTO

A great addition to Grilled Chicken.

Preparation Time: 5 minutes
Cooking Time: Nil

Ingredients
  • 2 Cups of Coriander Leaves (Chopped)
  • 1 1/2 Cloves of Crushed Garlic
  • 1/3 Cup of Toasted Market Grocer Cashews
  • 1/3 Cup Freshly Grated Block Parmesan
  • 1/2 Cup of TMG Independents Choice Sunflower Oil
Method
  1. Place the coriander, garlic, cashews and parmesan in a food processor and process until finely chopped.
  2. With the processor on a low setting, progressively add the Sunflower Oil in a thin steady stream until well combined as a paste.
  3. Season to taste with Salt and Pepper
  4. Store in an air tight container in the fridge ensuring that you add enough additional oil to cover the entire surface of the pesto.
